Baked Ham & Eggs Florentine
Ham & Eggs Florentine

8 large slices of ham
8 large eggs
Lemon pepper or other seasoning, to taste
1 cup shredded cheese
  1. Grease 8 ramekins (or oven-proof cups or mugs) and place a large slice of ham in each.
  2. Crack an egg into each cup.
  3. Sprinkle with lemon pepper or other seasoning.
  4. Bake at 325 to 350 degrees for 20 to 25 minutes, or until yolk has desired degree of doneness.
  5. Top each with about 2 tablespoons cheese before serving.

  6. Makes 8 servings.
