Christmas Breakfast Sauasage Casserole
A delicious holiday breakfast treat.
The carb count can be reduced further by using Low-Carb bread instead of regular whole-grain bread.
INGREDIENTS
1 pound ground pork sausage
1 teaspoon mustard powder
1/2 teaspoon salt
4 eggs, beaten
2 cups milk
6 slices whole-grain or Low-Carb bread, toasted and cut into cubes
8 ounces mild Cheddar cheese, shredded
DIRECTIONS
  1. Crumble sausage in a medium skillet.
  2. Cook over medium heat until evenly brown; drain.
  3. In a medium bowl, mix mustard powder, salt, eggs and milk.
  4. Add the sausage, bread cubes and cheese, and stir to coat evenly.
  5. Pour into a greased 9" by 13" baking dish.
  6. Cover and chill 8 hours, or overnight.
  7. Heat oven to 350 degrees.
  8. Cover and bake 45 to 60 minutes.
  9. Uncover and reduce temperature to 325 degrees.
  10. Bake an additional 30 minutes, or until set.
