2 lbs. boneless Chicken Thighs
1 oz. fresh Lemongrass
2 qt. Chicken Stock
1 tsp. fresh Lime Juice
Thai Peanut Sauce (as condiment)
- Cut Lemongrass into 1-inch pieces
- Combine all ingredients in a slow cooker and gook on low for 6 to 8 hours.
(Or on high for 3 to 4 hours)
- Remove Chicken, shred and return meat to cooking liquid to keep warm until serving.
- Serve with Thai Peanut Sauce
