Lemongrass Chicken
A one-pot meal direct from your crock-pot.
INGREDIENTS
Lemongrass Chicken
2 lbs. boneless Chicken Thighs
1 oz. fresh Lemongrass
2 qt. Chicken Stock
1 tsp. fresh Lime Juice
Thai Peanut Sauce (as condiment)
DIRECTIONS
  1. Cut Lemongrass into 1-inch pieces
  2. Combine all ingredients in a slow cooker and gook on low for 6 to 8 hours.
    (Or on high for 3 to 4 hours)
  3. Remove Chicken, shred and return meat to cooking liquid to keep warm until serving.
  4. Serve with Thai Peanut Sauce
