Salsa
If you live in the West or Southwest, you see it everywhere. Its great for dipping, on eggs, burgers, steaks, you name it.
INGREDIENTS
Basic Salsa #1
3-4 whole TOMATOES (peeled & seeded)
1 cup WHITE ONIONS or SCALLIONS (chopped)
1 can GREEN CHILIS (chopped & seeded)
2 cloves GARLIC (chopped)
3 tablespoon CILANTRO (chopped)
1/2 teaspoon SALT
1/4 teaspoon PEPPER
1 teaspoon SUGAR SUBSTITUTE (optional)
1 teaspoon CHILI POWDER (optional)

Basic Salsa #2
2 TOMATOES 1/2 RED ONION
2 GREEN ONIONS
1 clove GARLIC
1/2 JALEPENO CHILE(seeded)
3 tbsp CILANTRO
3 tbsp RED or WHITE WINE VINEGAR
Basic Salsa

Southwestern Salsa
Southwestern Salsa 2 TOMATOES 1/2 RED ONION
2 GREEN ONIONS
1 clove GARLIC
1 JALEPENO CHILE(seeded)
3 tbsp CILANTRO
3 tbsp RED or WHITE WINE VINEGAR
1 cup SWEET CORN (canned, drained)
1 AVACADO
1/2 cup RED/YELLOW BELL PEPPER (optional)
DIRECTIONS
  1. Peel and deseed tomatoes.
  2. Place all ingredients in a food processor or blender.
  3. Blend until desired chunkiness is reached.
  4. Refrigerate for 1 to 2 hours.
