Santa Fe Lamb Shanks
INGREDIENTS
4 fresh American Lamb shanks
1/4 cup chopped Scallions
1 clove garlic, crushed
2 tbsp. Olive Oil
1 can (15 oz.) Diced Tomatoes
1 1/2 cups water
1/2 cup chopped Celery
2 tbsp chili powder
1 tsp ground cumin
2 tbsp. Fresh Cilantro chopped
1/4 cup chopped Scallions

1 can (15 oz.) Diced Tomatoes
1 1/2 cups water
1/2 cup chopped Celery
2 tbsp chili powder
1 tsp ground cumin
2 tbsp. Fresh Cilantro chopped
DIRECTIONS
- Chop the Celery and Cilantro
- Heat the oil in a large skillet or pot over MEDIUM-HIGH heat.
- Wilt the Garlic.
- Lightly brown the Lamb shanks, turning frequently.
- Add the Tomatoes, Water, Scallions, and Celery.
- Blend in the chili powder, cumin, and cilantro.
- Simmer covered, over MEDIUM heat for about 1 hour, until shanks are tender.
