Santa Fe Lamb Shanks
4 fresh American Lamb shanks
1/4 cup chopped Scallions
1 clove garlic, crushed
2 tbsp. Olive Oil
1 can (15 oz.) Diced Tomatoes
1 1/2 cups water
1/2 cup chopped Celery
2 tbsp chili powder
1 tsp ground cumin
2 tbsp. Fresh Cilantro chopped
  1. Chop the Celery and Cilantro
  2. Heat the oil in a large skillet or pot over MEDIUM-HIGH heat.
  3. Wilt the Garlic.
  4. Lightly brown the Lamb shanks, turning frequently.
  5. Add the Tomatoes, Water, Scallions, and Celery.
  6. Blend in the chili powder, cumin, and cilantro.
  7. Simmer covered, over MEDIUM heat for about 1 hour, until shanks are tender.
