Pork or Beef Chorizo

A staple of many Mexican dishes. Cook as you would ground beef, and serve with eggs and cheese for breakfast, or add to beans, soups or burritos. The flavor is strong, so use less than you would other sausage or beef.

INGREDIENTS
1 pound ground pork or beef
1 teaspoon salt
2 tablespoons chili powder
1/8 teaspoon ground cloves
1 tablespoon paprika
1 clove garlic, crushed
1/2 teaspoon dried oregano
1 3/4 tablespoons cider vinegar
DIRECTIONS
  1. In a large bowl, mix ingredients until thoroughly blended.
  2. Cook as you would ground beef.
  3. Raw chorizo may be frozen for future use.

Makes about 1 pound, or 8 servings.
