Chicken Cordon Blue in Mushroom Sauce
This is a great dish to serve to guests.
Chicken Cordon Blue in Mushroom Sauce
4 boneless skinless chicken breasts
4 slices ham (Proscuito recommended)
4 slices swiss cheese
1 can mushroom soup (I really like Campbell's Golden Mushroom)
2 cups sour cream
1 cup fresh sliced mushrooms
  1. Place chicken breast between two sheets of plastic wrap or wax paper and pound until about 1/8 thick.
  2. Place 1 slice of ham and 1 slice of cheese in the center of each breast.
  3. Roll up and place seam side down in a casserole dish.
  4. Securing with a toothpick if necessary.
  5. Bake covered for 20 minutes at 350 degrees or until the chicken is no longer pink and juices run clear.
  6. While it is baking, mix together remaining ingredients.
  7. Pour over cooked chicken and bake until sauce bubbles.
