Roasted Turkey Breast
PERFECT for Low Carb meals!!!
I make this every few months when I'm tired of chicken. It's delicious and relatively simple to cook. Baste the turkey breast with butter and spices, toss it in the oven, and Voila!
INGREDIENTS
- 4lb Turkey Breast
- 6 tbsp (3/4 stick) unsalted Butter
- 3 slices of bacon (Chopped)
- 1 tbsp Italian Spice mix
- 1 tsp Smoked Paprika (Smoked is best!)
- 1 tsp Garlic Powder
- 2 tsp Onion powder
- 2 tsp Salt
- 1 tsp Black Pepper
DIRECTIONS
- Put the DEFROSTED Turkey breast on the counter for about 30 minutes
before cooking so it isn't cold when you start cooking - Preheat the oven to 325°
- Unpack the Turkey, rinse it with tap water, then pat it dry with paper towels
- Put the Turkey Breast in a uncovered roasting pan
- Using your hands, carefully "loosen" the skin all over the turkey breast.
(BE CAREFUL! Do not to tear the skin off, just loosen it!) - In a mixing bowl, Melt the butter in the microwave
(Most people just get the butter soft. I like it "melted" so I can brush it on.) - Put all the spices in the mixing bowl of butter and mix together thoroughly
- Using basting brush, liberally apply about half the butter/spice
mix UNDER the skin all over the Turkey Breast - Spread the remaining mixture over the outside of the Turkey Breast
- Place the UNCOVERED Turkey Breast in the oven
and cook approximately 12 minutes per pound (or until it reaches 163°) - Take the Turkey Breast out of the oven and let it rest for about 10 minutes
- Slice and ENJOY!
